Beat the eggs and add the 3 tbs of ketchup
Dip the cutlets in the egg mixture
Combine the two types of breadcrumbs and dip the cutlets in the egg mixture
Fry the chicken cutles for 3 min on each side and place the cutlets in a roasting pan
Save the frying pan for sauteing the peppers onions and mushrooms
Slice the peppers in strips along w/ the onions (and mushrooms, if using).
Saute the veggies in the reserved frying pan, adding oil as needed, until soft buy not mushy
