Grind the pecans to a med-fine meal in food processor. Add the cranberries and blend until the mixture looks evenly granular and the cranberries are incorporated, about 20 seconds.

Pour in the honey, sprinkle in the coconut and blend until the mixture forms a sticky, slightly oily, semigranular consistency that will easily stick together when squeezed in your hand. Scrape the dough into a medium bowl.

Pinch off small pieces of dough and roll into balles abuot 1 1/4 inches in diameter and set aside. Gently press each ball between your palms to form small disks abuot 1 1/2 inches in diameter.

Place disks on mesh dehydrator screens at least 1 inch apart. Dehydrate 105 for 22-26 hours. Allow bites to cool 20-30 min.
Store in tightly sealed container in the refrigerator for up to 2 weeks or at room temperature for up to 1 week.
