Remove the steps from the figs. Soak the figs for 4 hours in enough water to cover by 1 inch. Reserve the water for use later in smoothies.
Put the figs, sesame seeds, honey, and salt in a food processor and blend for 20-30 seconds. Scrape down the sides. Blend again until a mpost, slightly sticky, granular dough forms, about 10 seconds.
Scrape the dough into a bowl. Put the coconut in another medium bowl. Pinch off pieces of the dough and roll into balls about 1 inch in diameter. Toss the balls in the coconut to coat.
Store in a tightly sealed container in the refrigerator for up to 3 weeks or in the freezer for up to 6 months.
