1 c. rice, instant or long grain - cooked as directed on package
1 c. cheddar cheese - sharp, grated
3 eggs, beaten
1 t. instant onion
Instructions
Peel and slice squash into 1/4 inch slices. Cook rice, according to package directions. Add squash, to pan when rice is about half-cooked. Stir in remaining ingredients.
Bake in 1-1/2 quart uncovered greased casserole for 30 minutes at 350 degrees.
