     Pork Tenderloin W/Wild Berry Port Sauce

Ingredients
2 pork tenderloin (frenched)
1 tbsp herbs de Provence
1 garlic clove; minced
1 inch fresh ginger, grated
1/4 cup olive oil
juice of half a lemon
salt and pepper to taste
SAUCE-
2 cups ruby port
 
2 sprigs fresh thyme
1 shallot, sliced thin
2 tsp grated fresh ginger
zest of 1 large orange
2 cups mixed fresh berries

Instructions
Mix all pork (non-sauce; not including the pork) ingredients together and add to a zip-lock bag. Add pork. Refrigerate for at least 2 hours. For sauce, combine port, thyme, shallot, ginger and orange zest in a pot. Bring to a boil. Simmer until reduced by 1/2. Strain the liquid and pour back into pot. Reduce a further 1/2 (until slightly thick). Add berries; heat only until hot. Remove from heat and season with salt and pepper.
Take out the pork and pat dry. Fry in a small amount of olive oil till done. Heat up sauce. Serve over pork.
Serve with a salad and a good Rose wine.
