Mix all pork (non-sauce; not including the pork) ingredients together and add to a zip-lock
bag. Add pork. Refrigerate for at least 2 hours.
For sauce, combine port, thyme, shallot, ginger and orange zest in a pot. Bring to a boil.
Simmer until reduced by 1/2. Strain the liquid and pour back into pot. Reduce a further 1/2
(until slightly thick). Add berries; heat only until hot. Remove from heat and season with salt
and pepper.
