6 to 8 potatoes, peeled and cubed
|

1 stick margarine
|
|
1/2 c. diced celery
|
|
1/2 c. diced onion
|
|
3/4 c. diced carrots
|
|
3 Tbsp. flour
|
|
1 can cream of chicken soup
|
|
4 oz. shredded Cheddar cheese
|
|
4 c. milk
|
|

|
|
|
|
|
|
|
|
|
|
|
|
|
|
|

Instructions |
|
|
Cook potatoes until tender.
|
|
|
Saute onion, celery, and carrots in margarine. Add flour and mix.
|
|
|
Slowly add milk, one cup at a time, stirring constantly.
Add cream of chicken soup and blend.
Heat through, do not boil.
|
|
|
Add cooked potatoes to the milk/vegetable mixture.
Add cheese and blend in.
