Turn oven to 180C (350F).
Grease baking tray

Beat butter, sugar, egg and vanilla until smooth.
|
|
|
Stir vinegar into bowl. Add coconut and sifted flour. Mix well. Roll heaped teaspoonsful of mixture into balls then toss each one in the extra coconut.
|
|
|
Place on baking tray 5cms apart and bake for 15 minutes or until a nice light golden colour. Cool on a wire rack.

My daughter cooks these and sandwiches them together with jam. Otherwise you can have them plain. They are light and not too sweet.
