Heat Grill...Place one of the 4 chicken breast halves between 2
pieces of waxed paper. Pound to 1/4 inch thin, working from the
center out. (Use a meat mallot) Do this to ALL chicken halves.
Sprinkle with salt and pepper.
Melt 2 T butter, add 2 T green onions, 1 T green peppers and
mushrooms. Saute until tender. Spoon 2 T into center of each
chicken breast. Fold in edges and roll chicken up. Secure with
string or small skewer. Do this for all four halves of chicken.
Place chicken on medium-low heat. Grill 17-20 minutes, turning
occasionally and brush with melted butter.
Meanwhile, prepare sauce. Melt 1/4 cup butter, add onions and
green pepper. Saute. Add parsley and wine. Heat to boiling. Reduce
heat. Keep warm until chicken is done. Pour sauce over chicken
and serve immediately.
