1 med red onion, very thinly sliced, separted into rings
1/4 c. white balsamic vinegar
4 oz feta cheese, crumbled
3 lb mixed heirloom tomatoes, cut into chunks
1/4c. plus 1/2 tsp extra-virgin olive oil
1/4 tsp each salt and freshly ground pepper
1/2 c. torn fresh basil leaves
8 slices (1in thick) from a round loaf of bread of
semolina bread
1 lg garlic clove, peeled and halved crosswise
Instructions
In a lg bowl, combine onion, vineger and feta cheese. Let stand until onion have softened, about 10 min. Meanwhile, heat grill.
Add tomoatoes, 1/4c oil, pepper and basil to onion mixture- toss
Brush bread slices with 1/2 tsp oil and grill until lightly tosted. Spread garliccloves halves onto end of fork and immediatley rub over hot bread clices. Serve with tomoato salad.
