Preheat the over to 425 degrees F

Bring a pot of 2 quarters of water plus kosher salt and the lemon juice to a boil. Cut the florets off the stalk of the cauliflower. Put the cauliflower in the boiling water and cook for 5mins. Drain and poor the cauliflower into a bowl full of ice water. Let rest for 3mins or until chilled. Remove and pat dry.

Bring a skillet to heat on high, then add olive oil. When the oil runs easily in the pan add the onion. Cook and stir until translucent and soft, 2 to 3 mins. Add papriks and cauliflower and stir to coat evenly. Cook for 3mins stirring occasionally. Remove skillet from heat.

Add cocoa powder, salt and pepper and coat evenly. Put in the oven and cook for 5mins. Drizzle remaining lemon juice over and serve.
