Heat oven to 450. In a medium skillet, add 2 tablespoons of oil (2
turns of the pan) and head over medium/high heat. Season chicken
with salt and pepper and add to oil, cooking until golden brown on
each side. 5 minutes or so
Add butter and then hot sauce stirring until sauce thickens and
chicken is well coated (2-3 minutes).
When chicken is finished, place flatbreads on baking sheets. Top
with shredded cheese, chicken, celery, more shredded cheese and
blue cheese crumbles. Bake until flatbreads are crispy and cheese is
melted, 5 minutes or so.
