1/4 lb unsalted butter (1stick)

1 egg
|
|
1 C brown sugar
|
|
1 1/2 flour
|
|
1 t salt
|
|
1 t baking soda
|
|
1 C mashed banana, extra ripe
|

1 t vanilla extract
|
|
1/2 C sour cream
|

Instructions |

|
Sieve together flour, salt and baking soda then set aside. Cream butter in mixer. Once better if fluffy, add the sugar and blend well.

Add each egg, blending slightly in between. Mix half dry ingredients and half of the banana. repeat.
|
|
|
Add the vanilla extract. Blend in the sour cream. Turn batter into loaf pan lined with parchment paper. Let batter stand for 15 minutes.
|

|
Bake for 1 hour. To test if done, insert knife and if it comes out clean then it's ready. Turn the finished loaf on to a cooling rack.
