Soak the beans overnight. Drain, cover with distilled water, and add chopped vegetables. Bring to a boil, and then simmer for about 2 hours.
To prepare brown or basmati rice-
Boil 2 cups distilled water and tsp. Celtic Sea Salt. Add 1/3 cups of rice, reduce heat, and simmer for 30 minutes without lifting the lid. Set off stove and let sit for 15 minutes. Fluff with a fork and serve beans over rice.
