Preheat oven to 350 degrees. In greased 2qt casserole layer the chicken, eggs, carrot and peas. Mix the soup, chicken broth and season as desired with salt and pepper. Pour this mixture over the layers.
Stir together the biscuit mix and milk. Pour this over the casserole. Drizzle butter over the topping. Bake until the topping is golden brown, 30-40 minutes.
The crust with the butter tastes great! But out of guilt, I've used about 1/2 stick of butter and still been happy with it.
