Put chopped onions, minced garlic, and olive oil in a large pot and simmer until cooked.
Add chopped carrots, potatoes, beef, and turkey and fill the pot with water until submerged.
Turn heat on high until boiling. Add italian seasoning and bay leaves. Once boiling, turn heat to medium and let simmer for an hour while covered stirring occasionally.
After an hour or once liquid is reduced to proper amount add small amounts of gravy granules (or gravy package) until stew reaches proper consistency (thicker).
