Place sausage on a 15 in X 10 in X 1 in baking pan. Bake at 375 for 15-20 mins or until sausage is no longer pink, turning once; drain and slice into 1/4 in coins.
In a large bowl, combine eggs, milk, mustard, salt and pepper. Add the hash browns, sausage, cheese, red pepper and green onions; mix well.
Por into greased 13in X 9in X 2in baking dish. Cover and refrigerate overnight.
Remove from refirigerator 30 mins before baking. Bake, uncovered, at 350 for 65-70 mins or until set and golden brown. Let stand 10 mins before serving. Serve with salsa if desired.
