Preheat oven to 350 degrees. Combine potatoes, sour cream, soup and cheese in a large bowl. Pour into an ungreased 13x9 baking dish. Sprinkle with salt, pepper and cayenne (optional).
Top with cracker crumbs. Dot with butter (You don't have to use the whole stick - try half). Bake for 1 hour or until top is golden brown.
