3 cup coarsely chopped leftover roast beef, pork, or
lamb
2 cups leftover mashed potatoes
Instructions
Preheat oven to 425 degree. Heat 1 tbsp oil in 12-inch ovenproof skillet over moderate heat for 1 minute.
Add onion and saute, stirring frequently, until golden, about 7 minutes.
Mix in the cabbage, remaining oil, salt, and marjoram, then toss lightly.
Reduce the heat to low, cover and cook for 7 minutes or until the cabbage in wilted.
Stir in the beef and potatoes, transfer the skillet to the oven and bake, uncovered, for 20 minutes or until heated thru.
Brown under the broiler, if desired.
