Mix together water, sugar and yeast. Let set until it rises a few minutes. Then mix together with the liquid mixture; olive oil, salt, xanthan gum, white flour and tapioca flour.
Beat for 1 minute. Spread onto greased pizza pan or 2 small rounds. Bake at 350 for 15 minutes until slightly browned. Then top with pizza sauce, toppings and shredded mozzarella cheese.
Bake for additional 10-15 minutes.
