Sweat the vegetables in the butter. Add rice and saute until golden brown.

Add chicken stock and bring to a boil. Turn off heat, cover with foil and place in a 350 degree oven for 15 min.
|

|
Check consistency at 15 min, fluff with a fork when ready. Season with salt and pepper T.T.
