Heat olive oil in large pot; saute onion, green pepper and garlic. When onions are tender add remaining ingredients. Cover pot and let cook very slowly at least 6 hours, the longer the better. A banana or jalapeno may be added to the sauce, but taste often as it gets hot very quickly. Add pork spare ribs or meatballs to sauce 1 1/2-2 hours before serving. Just before serving add 1-3 T of suger to cut the bitterness of the tomatoes. (I often substitute fresh tomatoes for the stewed tomatoes)
