1 lb hot Italian sausage (chicken or turkey if available)
1 med green bell pepper, sliced
8-oz package sliced mushrooms
1 medium onion, chopped
3 c uncooked mini lasagna (mafalda) noodles
2.5 c water
1/2 tsp Italian seasoning
1 26-oz jar chunky tomato pasta sauce
1 c shredded Italian cheese blend or mozzarella
Instructions
In large skillet, cook sausage, bell pepper, mushrooms, and onion over medium-high heat, stirring occasionally, until sausage is no longer pink; drain.
stir in remaining ingredients, except cheese. Heat to boiling, stirring occasionally; reduce heat. Simmer uncovered about 10 minutes or until pasta is tender. Sprinkle with cheese.
