Place butter in nonstick skillet and saute onion and pepper. Add ham.

Whisk together eggs and milk. Add to skillet and scramble all together.
|

|
When eggs are set, mix in tomatoes w/ juice.
|
|
|
Mix in (preferred) or top with cheddar. If desired, sprinkle with salt and pepper.

Suggestions |
|
Serve with hot buttered toast. This can be adapted to an omelet - I spoon the tomatoes over the top in that case.
