chop garlic, ginger, lemongrass and chillies finely and fryoff a wee bit in a big pot, add the coconut milk, stock and bring up to temp and then add in the noodle and when cooked then add in the spinach to wilt. cook salmon in a frying pan when adding the noodles.then ladel into bowls and place a salmon fillet on top. can also substitute for chicken breast
