1 (1 lb) bah coleslaw mix, or 10 cups shredded fresh green cabbage
2 cups instant rice
Instructions
Spray slow cooker with nonfat cooking spray.
In the slow cooker, mix together the beef, broth, vegetable juice, tomatoes, onion and coleslaw. Cover and cook on low for 8-10 hours, or on high for 4-5 hours.
Before serving stir in the rice. Cover and let the soup sit for 5 minutes.
Serve hot.
