2 cups or 3 (5 1/2-oz) cans low-sodiem vegetable juice
2 (14 1/2-oz) cans stewed tomatoes
1 cup frozen chopped green peppers or 1 cup fresh
1 cup frozen chopped onnion or 1 cup fresh
1 cup instant rice
Instructions
Spray large slow cooker with nonfat cooking spray.
In the slow cooker, mix together the beef, broth, vegetable juice, tomatoes, green peppers, and onion. Cover and cook for 8-10 hours on low or on high for 4-5 hours.
Before serving stir in the rice. Cover and let sit for 5 minutes.
Serve hot.
