1 (15 ounce) can black beans, rinsed and drained (I like 2 cans)
8 ounces salsa
Sour cream
Instructions
In a 4 quart crock pot, combine zucchini, green sweet pepper, onion, celery, garlic, chili powder, oregano and cumin. Stir in tomatoes, corn, beans and salsa.
Cover, cook on low heat for 8-10 hours or high heat for 4-5 hours. To serve, ladle into bowls and top with dollop of sour cream.
