Spray a slow cooker with nonfat cooking spray. In a bowl, beat together the egg whites and milk. Stir in the bread cubes and salsa.

Add the beef and mix well. Shape the beef mixture into a round loaf and place it in slow cooker. Spread the ketchup on the top of the loaf.

|
Place the carrots and potatoes on top. Cover and cook on high for 1 hour.
|
|
|
Reduce the heat and cook for 7-8 hours longer until the meat is no longer pink in the center and the vegetables are tender.

Since these vegetables are high in carbohydrates, a fresh garden salad would balance out the meal quite nicely.
