In a large pot heat oil over medium-to-high heat. Add onions and stir frequently, about 7 minutes until translucent and lightly browned. Add half the apples and cook about 3 minutes, stirring occasionally.
Add sausage, fennel seed, salt, and pepper. Break up sausage with side of large spoon. Stirring occasionally, cook about 8 minutes or until sausage is cooked through.
Add stuffing, butter and liquid according to stuffing manufacturer’s directions.

This can be made 2 days ahead. If you are going to stuff a turkey with it, sure to bring it to room temperature before putting it in the turkey.
