- do chicken, and cut into small pieces.
- melt the butter in a pan, add onions and green pepper until the onion are transparent. add all the spices, and tomato sauce, tomato cans. Let boil 20 minutes. Keep this overnight in the fridge (let it cool down)
- next day, saffe the tomato sauce from the mixture.
- put chiken, vegetables, cheese - roll tightly. Put in Pyrex. Usually they do about 6-8 rolls.
- throw the rest of the vegetables in the tomato sauce, add sour cream until they mix will together.
- pour sauce over enchiladas (make sure it reaches the cracks between the enchiladas)
-put cheese on top
-put in the oven for 40 minutes.
