Spread croutons on bottom of greased 9x13 baking dish. Brown sausage. Drain and spread sausage croutons.
In a large bowl, whisk together eggs and milk. Stir in soups, spinach, mushrooms, cheese and mustard. Pour egg mixture over sausage and croutons. Refrigerate overnight.
Next morning, preheat oven to 325 degrees. Bake for 50-55 minutes or until set and lightly brown on top. Serve hot.
