combine rice and water over high heat. bring to a boil, reduce heat to simmer, cover and cook until water is absorbed or rice is tender, about 45 minutes.. remove from heat and let rice stand, covered, at least 10 minutes.

turn cooked rice out into a large shallow dish use a spatula and a slashing motion to spread rice evenly in dish, dont toss or rice can get gummy. drizzle vinegar ove rice. with same slashing motion, mix until grains are coated and glossy. cover with damp kitchen towel and cool at room temp until cool enough to handle, do not refrigerate.
