1 cup cubed leftover chicken or 1 raw chicken breast cut into cubes
1/2 pound Hillshire Farms-type smoked sausage or Polish sausage, the pre-cooked kind
15-20 frozen shrimp, thawed and peeled
1 teaspoon cajun seasoning and/or 1/4 tsp crushed red pepper if you like it spicy
Instructions
If using raw chicken breast cut it into cubes and saute for 5 minutes in a little vegetable oil until cubes are firm and white.
Put water and jambalaya mix in saucepan according to directions on package, omitting the oil. Add cajun seasoning (I use Spice Hunter or Morton & Bassett brand)and/or red pepper. Cut sausage into cubes and add to mix. Cover and bring to a boil. Turn down heat and simmer for 18 minutes.
Gently stir in raw shrimp and cooked chicken. Return to stove, cover, and simmer another 7 to 10 minutes.
To stretch this out you can add 1/3 cup uncooked white rice and 2/3 cup water extra from the start, or buy the family-sized box of jambalaya mix!
