Preheat oven to 375 degrees F. Grease and line 2 trays.Put the butter into a bowl,then sifty the powdered sugar over the butter.Use a wooden spoon to beat them together,Then stir in the vanilla. Sift both flours over the top,then stir everything until it is smooth.Put 1 teaspoon of the mixture onto 1 of the trays.put more teaspoons of mixture onto both trays,leaving spaces between them. flatten each blob with the bask of the teaspoon.Bake for 12-14 minutes,then leave them on the trays for 5 minutes.Use a spatula to lift them to a wire rack to cool.
for the ganache,put the chocolate chips into a heatproof bowl.add the cream.pour 2 inches of water into a pot.heat the water until it bubbles,then take it off the heat.carefully put the bowl into the pot and stir until the chocolate is melted.Using oven mitts,lift the bowl out of the pot.let it cool a little.put it into the refrigerator for an hour,stirring it occasionally.
when the mixture is soft like butter,take it out of the refrigerator. use a butter knife to spread some onto the flat side of a cookie. press another cookie on top. Sandwich the cookies into pairs until the cookies and ganache are all used up.
Eat up. Yummy.
