SIFT together the following,
flour, baking soda, salt, ground ginger, cinnamon, cloves, all spice.
Divide into two even halves.
MIX in a seperate bowl,
Melted butter, melted shortening, light brown sugar, molassess.
ADD beaten egg to mixture.
Slowly add in the flour mixture into two seperate steps.
DIVIDE the dough into two halves. Wrap each half in plastic, and pat to 1/2 inch thickness.
Chill in fridge for 2 hours.
Preheat oven to 350.
On a floured surface, roll out each a piece of dough into 1/4 inch thickness. Dust with flour as needed.
Cut ginger bread men and arrange them 1 inch apart onto parchment paper lined baking sheets.
Brush off excess flour and chill again for at least 15 minutes.
BAKE until the cookies are golden around the edges, 10 to 12 minutes. Transfer to a rack, then cool.
Cookies can be decorated with royal icing once completely cooled.
