1 lb. Ziti pasta
1 lb. Italian turkey sausage, casing removed
1 medium onion, chopped
3 cloves garlic, chopped
1 (28 oz) can diced tomatoes
1 can tomato sauce
6 oz pesto
15 oz whole milk ricotta cheese
9 oz bag of spinach leaves
Butter, for baking dish
3 c. shredded mozzerella
2 c. grated parmesan cheese
Instructions
Preheat oven to 375.
Cook Ziti to al dente according to package directions and drain.
In large skillet over medium heat, cook turkey, onions and garlic until sausage is cooked through. (break up sausage as it cooks)
Add the diced tomatoes, sauce and pesto and simmer for 10 min.
In a LARGE bowl combine ricotta cheese, spinach, 1 1/5 c. parm cheese, and 2 c. mozzerella. Stir to combine.
Butter a 4 quart baking dish (a 13x9 will work, just mound it up and it will cook down as it bakes). Add the cooked pasta, then sausage mixture, then spinach and cheese mixture. Top with the rest of the mozzerella and parm cheese.
Bake until completely heated through and golden and crisp on top. About 20 min.
