1 C. grated cheese (jack, mozzarella, provolone or parmesan)
1 egg, beaten
salt and pepper
2 T. chopped fresh parsley
Instructions
Preheat oven to 400. Remove stems from mushroom caps and chop roughly.
Melt butter over medium heat and saute garlic with chopped stems until soft. Set aside to cool.
In a large bowl, combine stuffing, cheese, beaten egg and parsley. Mix together well. Mix in sauteed garlic and mushroom stems, along with melted butter. Season mixture with salt and pepper.
Rub mushroom caps lightly insde and out with cooking oil and sprinkle with salt. Stuff mushroom caps with stuffing mixture and arrange on oiled baking sheet. Bake 15-20 minutes, until golden brown. Let mushrooms rest for 5 minutes before serving.
