combine water and gelatin. heat until mixture is heated and gelatin dissolves. stir in lemon extract, lemon peel and fructose. set aside.
butter 9 inch pie plate. sprinkle graham cracker crumbs over bottom and sides of plate. layer sliced peaches in pie plate. Top with 1/3 gelatin mixture. do the same for strawberries and blueberries.
cover with remaining gelatin. refrigerate 2-4 hours. Garnish with lemon slices.
