4 1/2 lb. red potatoes, cut into 1/4 in. thick slices
16 oz. sour cream
12 oz. Velvetta, cut up
8 oz. ham steak, chopped
1/2 cup green onions, sliced
1/4 cup grated Parmesan cheese
Instructions
Preheat oven to 350 F. Spray 13x9 inch dish with cooking spray. Place potatoes in large saucepan; cover with water. Bring to boil on high heat. Reduce heat to low; cover and simer 10-12 minutes or until tender. Drain potatoes. Return potatoes to pan.
Transfer 1/4 of potatoes to large bowl. Add sour cream, mash with potato masher. Cook ham steak for 3 minutes per side; cut up. Add Velvetta, ham, green onions; mix lightly. Add mashed potatoes to saucepan; stir gently. Spoon into baking dish; sprinkle with parmesan cheese.
Bake 30 minutes or until heated through.
