Mix dry ingredients- cut shortening until mixture resembles coarse crumbs. Combine egg and milk; then add to flour mixture. Stir until dough follows fork around the bowl. Turn out on lightly floured surface. Knead gently with heal of hand about 20 strokes. Roll dough to 3/4 inch thick. Dip 2 inch biscuit cutter or the rim of a glass in flour and cut straight down through the dough, no twisting. Put on ungreased baking sheet 3/4 inch apart for crusty biscuits or close together for soft sides. If desired, chill 1 to 3 hours. Bake in 400 degree over for 10 to 14 minutes. Makes about 2 dozen.
