To make the sesame sauce- Grind toasted sesame seeds with a mortar and pestle or spice grinder until sticky. Add soy sauce and sugar and combine.
Drain the tofu. Cut in half horizontally, then into 4, making 8 squares in all.
To make the sesame dressing- Mix sesame sauce and rice vinegar in a small bowl. Add chopped leeks and ginger and stir to combine.
Place tofu on a serving plate, pour over the sesame dressing and top with salad leaves. Serve.
