Dressing-
|
|
1/4 C. grated parmesan cheese
|
|
1/2 C. chopped parsley
|
|
1/2 C. mayo
|
|
1/4 C. white wine vinegar
|
|
3 cloves garlic, minced (1-1/2 t.)
|
|
Pinch of cayenne pepper
|
|
Salt and pepper to taste

Salad-
|
|
|
|
1/2 lb. penne pasta
|
|
2 C. packed baby spinach, washed and stemmed
|
|
2 small jarred roasted red peppers, diced
|
|
1/2 lb. smoked mozzarella cheese, diced
|
|
|
|
|
|
|
|
|
|
|
|
|
|
|
|
|
|
|
|
|
|
|
|
|
|
|
|
|
|

Instructions |
|
|
For dressing, combine parmesan cheese, parsley, mayo, vinegar, garlic, cayenne, salt and pepper with hand mixer or blender until smooth.

|
For salad, cook pasta until al dente. Drain, run under cold water until chilled through, drain.
|
|
|
In large bowl, combine pasta, spinach, red peppers and mozzarella. Toss salad with dressing, serve immediately.
|
|
|
Can make salad up to 2 days ahead of time and regrigerate, but add spinach and dressing just before serving.
