1 can(15 oz) white kidney or cannellini beans rinsed and drained
1 cup chopped fresh tomato
1/3 to 1/2 C shredded fresh basil
1 to 2 T balsamic vinegar
1/4 tsp salt
1/8 to 1/4 tsp pepper
1/3 C shredded Parmesan cheese
Instructions
In large saucepan, bring broth to boil. Add tortellini and cook until tender. Stir in beans, tomato and basil. Reduce heat and simmer uncovered for 5 minutes. Add vinegar, salt and pepper. Serve with cheese.
