Beat the butter and sugar together with an electric mixer until light and creamy. Beat in the egg. Beat in the egg substitute. Beat in the zest and extract
Combine the flour, poppy seeds, baking powder, baking soda and salt and then beat them in, alternating with the buttermilk.
Spray a loaf pan with nonstick pan spray. Dust with flour. Pour in the batter, then bake at 350 degrees for 1 hour or until a toothpick, inserted into the center, comes out clean. Cool.
Combine the confectioners' sugar and lemon juice as a glaze. Drizzle the glaze onto the cake.
