Saute onion, potato, garlic, salt and pepper. In large pot, bring tomatoes, rotel, green chili's, and water bring to a boil for 5 minutes. Add sauted mixture after pot boils and simmer for 1 hour.
Saute chicken in small amount of olive oil. Add salt, pepper, and garlic. Shred in small pieces and add to chili mixture. Simmer then for 2 hours.
