1 med red potato peeled and cut into 1/2 inch dice
3 C water
2 C chicken broth
6 ears corn
1 t salt
3 T chopped basil, chives, or parsley
Instructions
Melt butter in medium pot over medium-low heat. Add onion, potato and 1 C of water and bring to a simmer. Cover and simmer for 10 minutes.
Add broth and remaining 2 C water and bring to a boil. Stirr in corn, reduce to a simmer, and cook until corn is done (2 minutes). Add juices from cob and salt. Remove from heat and cool for 5 minutes.
Spin in food processor until smooth. Reheat and season with salt and pepper. Sprinkle with herbs.
