1 1/2 lb green beans, ends removed
|
|
1 small red onion, minced
|
|
4 oz feta, crumbled
|
|
1/2 c coarsely chopped walnuts
|
|
Lemon vinaigrette-
|
|
3 T fresh lemon juice
|
|
3 T white wine vinegar
|
|
1 T Dijon mustard
|
|
|
|
1/2 t sugar
|
|
1/2 c vegetable oil
|
|
1/4 t salt
|
|
Fresh ground pepper
|
|

|
|
|
|
|
|
|
|
|
|

|
|

Instructions |

|
Plunge green beans into boiling water for 5 minutes. Drain and
rinse with ice water. Pat dry, cover, and chill.
|

|
Make lemon vinaigrette-
Whisk lemon, vinegar, mustard, and sugar. Add oil and season with
salt and pepper. Set aside.
|
|
|
Transfer beans to shallow bowl, add onion, and toss with
vinaigrette. Sprinkle with nuts and feta.
