Melt lard in heavy pot over medium heat until 365°F or until a 1
inch cube of bread fries golden brown in one minute.
Mix flour and spices together in shallow bowl. Beat eggs and milk
in another shallow bowl. Dip chicken in flour mixture to coat and
shake off excess. Dip in milk-egg mixture and let excess run off.
Dip pieces again in flour.
Place chicken in frier, skin side down, cooking dark meat first.
Cover pot and cook for 15 minutes. Uncover pot, turn chicken over,
and cook other side for 15 minutes.
