1/2 c shredded colby-jack, cheddar or other favorite cheese
6 slices cooked bacon, crumbled OR diced ham
Instructions
Preheat oven to 375. This is the first time I've made this recipe
so adjustments will probably need to be made. This sentence will
be removed when that has been done -)
In a medium saucepan over medium low heat, melt butter, saute
onion until clear (or add onion powder). Add corn starch and
about 1/2 cup milk. Stir over low heat until smooth, adding milk
about 1/4 cup at a time. Add bacon crumbles. Continue to cook,
stirring occasionally until mixture starts to thicken. Keep heat
fairly low as butter and milk burn easily.
In a shallow 2 quart baking dish, spread 1/2 potatoes. Pour 1/2
sauce mixture over, mix slightly. Sprinkle with 1/4 cup cheese. Add
remaining potatoes, sauce and cheese to make second layer.
Cover with foil, bake at 375 for 30 minutes. Remove foil and
continue baking for 10 minutes. A deeper pan will require additional
covered baking time. To achieve a nice golden brown color, broil on
high for a very short time watching carefully.
